HEARTY HEALTHY
BEEF BOURGUIGNON

A French classic for a great recovery meal
This dish has quickly become one of my favourites.
​
It is hearty, full of flavour, and after a big workout, it is the perfect
recovery meal to get you back in the gym, training in no time.
​
METHOD:
FOR THE MEAT

Lightly brown the bacon in a frying pan for 2 minutes, and then but a bigger pot

Next, brown the beef, and then add to the pot with the bacon

Lightly fry the onions and carrots for 4-5 minutes, adding the garlic at the end. Then add it all to the pot with the bacon and beef.

Add teh plain flour to the pot, and cook for 1 minute, while stirring continuously.

Next, add the wine, and enough stock to cover all of the ingredients.

Bring it to the boil, and then leave it to simmer for 2 hours

FOR THE MASH POTATO

Peel and chop the potatoes

Boil them for approximately 15 minutes, or until tender, in salted water
-
Drain them in a colander, then tip them back in the pan
-
On a low heat, add the butter, and gradually add the milk, stirring the whole time
​
Serve them together with a generous garnish of fresh parsley.

INGREDIENTS:

FOR THE MEAT DISH

175g unsmoked bacon, sliced into thin strips
-
1.3kg of chopped stewing beef
-
2 carrots, sliced
-
2 aarlic cloves, chopped finely
-
3 tbsp plain flour
-
700ml red wine
-
400ml water with beef stock sachet
-
2 tbsp butter
-
350g button mushrooms
-
2 tbsp chopped fresh parsley
-
Season with salt and pepper to taste

FOR THE MASH POTATO
-
2kg potatoes
-
50g unsalted butter
-
100ml milk
-
Salt and pepper to taste
​
