BEEF BOURGUIGNON

A French classic for a great recovery meal

This dish has quickly become one of my favourites.

​

It is hearty, full of flavour, and after a big workout, it is the perfect 

recovery meal to get you back in the gym, training in no time.

​

METHOD:

 

FOR THE MEAT

  • Lightly brown the bacon in a frying pan for 2 minutes, and then but a bigger pot

  • Next, brown the beef, and then add to the pot with the bacon

  • Lightly fry the onions and carrots for 4-5 minutes, adding the garlic at the end. Then add it all to the pot with the bacon and beef.

  • Add teh plain flour to the pot, and cook for 1 minute, while stirring continuously.

  • Next, add the wine, and enough stock to cover all of the ingredients.

  • Bring it to the boil, and then leave it to simmer for 2 hours

FOR THE MASH POTATO

  • Peel and chop the potatoes

  • Boil them for approximately 15 minutes, or until tender, in salted water

  • Drain them in a colander, then tip them back in the pan

  • On a low heat, add the butter, and gradually add the milk, stirring the whole time

​

Serve them together with a generous garnish of fresh parsley.

​

INGREDIENTS:

FOR THE MEAT DISH

  • 175g unsmoked bacon, sliced into thin strips

  • 1.3kg of chopped stewing beef

  • 2 carrots, sliced

  • 2 aarlic cloves, chopped finely

  • 3 tbsp plain flour

  • 700ml red wine

  • 400ml water with beef stock sachet

  • 2 tbsp butter

  • 350g button mushrooms

  • 2 tbsp chopped fresh parsley

  • Season with salt and pepper to taste

FOR THE MASH POTATO

  • 2kg potatoes

  • 50g unsalted butter

  • 100ml milk

  • Salt and pepper to taste

​

Difficulty Level: Easy

Cooking time: 2 hours

Preparation time: 30 minutes

Serves: 4-6
