Scandinavia's favourite health food, with a
high protein twist
Smørrebrød, is a traditional Danish/Scandinavian open-faced sandwich. In classic Nordic fashion, it is perfectly simple, stylish, and well presented.
It consists of a thin, dense piece of buttered rye bread (rugbrød), topped with things like cold cuts of meat, fish, cheese, vegetables, spreads, and garnishes.
I have made my own twist on this Nordic staple, by creating 4 protein packed versions, for a hearty recovery meal after your workout that will have you crushing your next sessions with even more vigour.
METHOD
The ingredients like hard boiled eggs and asparagus will need to be pre-prepared, but all the other ingredients can be purchased cold, or you can cook them all yourself in advance and have them ready at any moment when hungry.
Rememeber that presentation is typically a focus point for Scandinavians, so try making it look good, and you'll be surprised how much better it can taste.
THE COPENHAGEN
INGREDIENTS:

½ avocado (Mushed down) as the base

Asparagus (fried)

Smoked salmon (1 generous heap)

THE OSLO

INGREDIENTS:

Cottage cheese for the base

Spinach (handful)

Steak (1 generous heap)

Red pepper (fresh or I used pickled in a jar)

2-4 pickled boquerones (sardines work just as well)

Hummus for vegetarians or taramasalata (A Greek meze made from cod roe) as the base

1 hard boiled egg (cut into 3-4)

¼ cucumber (sliced in strips)
