SPINACH & KALE

GREEN EGGS & HAM

A power breakfast inspired by Doctor Seuss

"I do not like them Sam-I-Am. I do not like green eggs & ham."

​

This recipe was inspired by my love of the children's classic book, Green Eggs & Ham' where the main character doesn't want to eat the food that the persistent Sam-I-Am, keeps offering him.... probably because it's green! He eventually does try them, and falls in love.

 

In my recipe, these bright green eggs are naturally coloured with spinach and kale, to give them a vibrant glow that pack a lot of nutrients.

Serves: 2-4

Cooking time: 1 hour

Difficulty Level: Medium

 

 

 

INGREDIENTS:

FOR THE GREEN EGGS

  • 4 eggs

  • 4 egg whites

  • Generous handful of spinach

  • Generous handful of kale

​

FOR THE HONEY GLAZED HAM

  • Unsmoked boneless gammon joint

  • 4 tbsp of runny honey

  • 4 tbsp of English mustard

METHOD:

 

FOR THE HONEY GLAZED HAM

  • Put the gammon joint in a large pot, covering with cold water, and then bring to the boil.

  • Leave on a low, bubbling heat for 30 minutes to continue cooking and cover with a lid.

  • Remove the gammon from the water and set aside to cool for 10 minutes.

  • Preheat the oven to 200C/180C Fan/Gas 6, and then line a large roasting tin with kitchen foil.

  • Use a small knife to remove the rind from the gammon joint, leaving as much of the fat intact as possible. Score the fat in a diamond pattern.

  • Next, mix the honey and mustard together, and then use half the mixture to glaze the gammon. Preferably with a brush if you have one.

  • Roast in the centre of the oven for 10 minutes

  • Next, take the gammon out, and flip it over. Use the remaining  honey and mustard mixture to glaze the rest of the gammon.

  • Return the gammon to the oven for an extra 10– 15 minute.

  • You will know when the gammon is ready because the fat on the top will be glossy and golden brown.

  • Leave to rest while you prepare your eggs.

FOR THE GREEN EGGS

  • Crack the eggs into a mixing bowl​

  • Add the spinach and kale

  • Blend together- I used a hand blender but you can also use a food processor, or even a juice blender.

  • Using a few drops of olive oil, fry the mixture in a frying pan on a low heat like regular scrambled eggs.
