SUPER SPEEDY

PROTEIN PANCAKES

VEGAN FRIENDLY

Fluffy pancake goodness & all natural ingredients

 

 

 

INGREDIENTS:

​

  • 2 medium size bananas

​

  • 6-7 medium egg whites

​

  • 1 cup/punnet of blueberries (frozen or fresh)

​

  • Olive oil (spray or bottle)

 

​

These are seriously my all-time favourite! Pancakes that are super-fast, and simple to prepare and cook, and guess what?

​

It’s only 4 ingredients, and none of them refined sugars, or even flour!

​

I love them because not only do they have a unique taste from regular pancakes, but they’re also ideal for when I want something yummy and tasty without feeling too full and heavy afterwards.

Makes: 6-10

Preparation time: 5 minutes

Cooking time: 5 minutes

Difficulty Level: Easy

METHOD:

​

  • Just cut or rip the bananas up into small pieces (Just small enough that the blender will be able to make easy work of them), and put them into a mixing bowl.

​

  • Crack and seperate the egg whites from the yolk, putting the egg whites into your mixing bowl with the bananas.

​

  • Blend- If you're like me and you don't have a big fancy blender, then a simple hand blender will do just fine.

​

  • Blitz it all up until you have a nice smooth batter without any lumps. It should be a bit frothy on he top.

​

  • Add the blueberries to that batter, and give a quick stir so they’re mixed in.

​

  • Prepare the frying pan with a light coating of oil and add a large blob of pancake mix. Cook on a medium heat, for roughy 2 minutes, and flip it with a spatchula when you start see bubbles appear in the middle of the pancake. Leave it on this side for roughly 1 minute.

HOT TIP

These have a different texture to regular pancakes. Make sure they are cooked at least 80% properly before you flip them, otherwise they will be too wet and you will get pancake everywhere!

FUN ALTERNATIVES:

Here are a few fun additions to recipe that I hope you'll try as well. Each can be done separately, or feel free to experiment by mixing and matching

​

MORE PROTEIN:

  • Protein powder (1-2 scoops, and preferably one that you actually like the taste of so you don’t ruin the pancakes- think vanilla or chocolate)

  • Cottage cheese (1/2 cup)

​

MORE FILLING:

  • 1/2 cup of oats per, for a more substantial meal & less runny pancake mixture

  • You can top these with yummy peanut butter

​

CHANGE THE FLAVOUR:

  • Vanilla extract (1/2 teaspoon)

  • Cocoa for a more indulgent taste (1tablespoon)

  • Coconut oil (Switch olive oil for a good quality coconut oil for a unique flavour that will blow your mind!)

  • Cinnamon (1/2 teaspoon)

 CHANGE THE TEXTURE:

  • For an even fluffier pancake, try first whisking the egg whites as thick as a meringue, so the eggs could stick to the bowl if you tipped it upside down. Do this before mixing with the banana and other ingredients, then mix all and blend as normal.
